2 graham cracker or chocolate ready crust (8")
6 ounces semisweet chocolate
24 ounces cream cheese
1/2 cup granulated sugar
2 large eggs (or 3 small eggs)
1 cup heavy cream
1/3 cup espresso (or very strong brewed black coffee)
1 teaspoon vanilla extract

Preheat oven to 350º. Melt the chocolate in the microwave (90 seconds stir..15 seconds stir..until melted) In large mixing bowl, beat together the cream cheese and the sugar until light. Add the eggs, one at a time, beating well after each addition. Beat in the heavy cream. Pour the melted chocolate slowly into the cheese mixture, then add the coffee and vanilla. Stir well to blend ingredients. Pour the batter into the pie crusts and bake for about 45 minutes, or until the edges of the cake are puffed up.
