9x9 rimmed baking sheet
9 standard sized graham crackers
2 tablespoons sugar plus 3/4 cup for cream cheese mixture
6 tablespoon softened cream cheese
2 tablespoon vanilla
1 pint of heavy whipping cream
Cut up fresh fruit of your choice ( strawberries, kiwi, and oranges)

Preheat oven 350º- using a food processor, blend graham crackers until they turn into fine crumbs and add 2 tablespoons sugar. Slowly add melted butter until just blended. Press Cracker crumbs into bottom of baking sheet. Bake crust until just brown (about 10-15 minutes) Let crust cool completely. While crust is cooling, in a mixing bowl combine cream cheese 2/3 cup sugar and vanilla. Beat mixture until light and fluffy. Slowly add in whipping cream and continue beating until stiff peaks start to form. Spread whip cream mixture on cooled crust. Top with fruit of your choice. Let chill for at least 2 hours. Serve chilled. Enjoy!
