Ingredients: 3 T. butter 3 T. flour 3 c. chicken stock 2 cups whipping cream 2 T. butter 1 large onion, minced 1 large carrot, minced 1 large green pepper, finely chopped 3 jalapenos, seeded and finely diced (add more if you want it spicier) Salt to taste 1 c. grated Swiss cheese 1 c. grated cheddar cheese

Directions:Melt 3 T. butter in heavy large saucepan over low heat. Add flour and stir 3 minutes. Mix in stock and cream. Increase heat and bring to boil, stirring constantly. Reduce heat and simmer until thickened, stirring occasionally, about 10 minutes. Meanwhile, melt 2 T. butter in small skillet over low heat. Add onion, carrot and bell pepper. Cook until soft, stirring occasionally, about 8 minutes. Mix in jalapenos. Add both cheeses to cream mixture and stir until melted. Mix in vegetables. Season to taste and serve. |

Notes: Papaw's dad wasn't around much when he was growing up. All the kids had a hard life, chopping peanuts, picking fruits and vegetables and selling them along side the road. Mostly, they ate venison as it was readily available. Papaw became an excellent hunter because he had to feed the family. We cannot know all he went through as a child, but he was always happy and smiling as long as I knew him. He counted his blessings daily and that is how we will all remember him.
