1/2 cup margarine
1 tsp. vanilla
1 cup pumpkin
1 2/3 cup flour
1 tsp. baking soda
1 1/2 tsp. cinnamon
1 1/2 cup sugar
2 eggs
1/3 cup water
1/2 tsp. baking powder
1/2 tsp. salt
3/4 tsp. nutmeg

I usually double the or triple this recipe. If you use Pumpkin it is just the canned pumpkin mix that you get to make pie filling found in the baking aisle. (*1 large can of pumpkin mix =triple the recipe.) Be careful not to over nutmeg it. The nutmeg is what gives it the awesome flavor but if you put too much in its going to end up tasting almost spicy. Watch the bread carefully-all ovens are different and depending on your loaf size it may take half the time-I usually start with 20 min. on the timer and then keep checking it...the really big loaves can take over and hour sometimes so I recommend using those small disposable loaf pans.

Preheat oven to 350º
Spray Pans well with non-stick cooking spray

Beat sugar and margarine together until fluffy. Beat in eggs. Stir in pumpkin. Add water and vanilla. Stir in remaining dry ingredients. (You can choose to stir in chocolate chips here or whatever else you may want to add.) Pour into pans and bake!
