1 to 1/2 lbs center cut pork chops
2 cans white kidney beans
2 cans navy beans
2 cans great northern beans
1 can fire roasted tomatoes
1 box vegetable stock
1/2 to 1 teaspoon chili powder
1 jalapeņo
1 small white onion
Salt and pepper to taste

Cube center cut pork chops and brown in pan with 1 tbs EVOO(extra virgin olive oil). Set aside. Drain and rinse all beans thoroughly. Put beans, tomatoes, vegetable stock and pork in slow cooker. Dice 1/2 white onion, jalapeņo, chili powder and put in slow cooker. Reserve the other half of white onion ( diced ) for topping. Cook on low for 3 to 4 hours or until pork in tender and cooked through. Add salt and pepper to taste. Use the seeds of the jalapeņo for a spicier version.

Leave the pork out and you have a great vegetarian version!!! Or sub pork with shredded chicken. Still delicious.
