4-6 oz fish filets like mahi mahi or cod
Coconut milk 1 c.
Lemon juice 1 t.
1/2 c. roasted macadamia nuts coarse grind
1/4 c. coconut
1/2 t. lemon juice
1 T. parsley
1/2 t. salt
Sauce:
1 T. lemon juice
1 t. lemon zest
parsley
5 T. olive oil

Directions:
Directions:
Oven 400º
Marinate fish in milk and lemon juice for 1 hour
Add coconut lemon zest parsley salt to pulsed nuts and pulse X 2
Pat fish dry and smear dijon. Press fish into above mixture both sides.
Baking dish with 1 t. coconut oil and drizzle with 2 t. coconut oil.
Bake 15 min.
Spoon mixed sauce over fish
