1 cup Crisco
2 1/4 cup flour
1/2 tsp salt
1 stick butter
1 1/4 c. Sugar

1 can cherries
Red food coloring

Directions:
Directions:
Put Crisco in bowl; add 2 1/4 c. flour and mix well. Add salt and enough cold water to make ingredients cling together. Roll dough until it is very thin.

Cut up the stick of butter and drop it randomly in a 12 x 13" baking dish.

In bowl, combine sugar, a pinch of salt, 2 heaping T. Flour and mix well. Add can of cherries, 1 cup water, 4 tsp red food coloring, and mix well. Pour over butter in baking dish. Top with the pie crust you rolled out (either in one piece or in strips). Bake in 350º oven until crust is brown.

This recipe is similar to the famous cherry cobbler served in the old Underwoods barbecue cafeteria in Lubbock in the 50s and 60s.
