2 sticks butter - softened
2/3 cup sugar
1 large egg
1/4 tsp baking powder
1/8 tsp salt
1 1/2 tsp vanilla
2 1/2 cup GF flour
1/2 tsp xanthum gum

Icing:
4 cups powdered sugar
5 T egg whites
1/2 tsp cream of tartar

Cookies:
Cream butter and sugar. Add egg, baking powder, salt and vanilla and mix until well blended. Stir in flour and xanthum gum until well-blended and smooth.

Divide the dough in half and roll out each half to 14 inch thickness between two sheets of wax paper. Keeping the paper in pale, move the dough to the refrigerator and chill for 20 -30 minutes.

Preheat oven to 350º. Grease cookie sheets

Take one portion of down out of the refrigerator. Peel one piece of wax paper off and then replace it. This is now the bottom side of your dough. Remove the other piece of wax paper and discard. Cut out the cookies using cookie cutters. Place on cookie sheet about 1 inch apart. Bake until lightly colored and slightly darker on edges, about 6 - 9 minutes. Rotate cookie sheet halfway through baking for even browning. Transfer to cooling rack.

Icing:
Using and electric mixer on low, combine all ingredients. Beat on high until icing is whipped an opaque, about 2 minutes. Thin with water as needed to make a stiff, but spreadable icing for decorating.
