1 lb. zucchini (3 medium) OR 4 cups finely shredded
1/4 cup chopped onion
1 T. margarine
10 oz. package frozen whole kernel corn
1 cup shredded cheddar cheese
2 beaten eggs
1/4 tsp. salt
1/4 cup fine, dry bread crumbs
2 T parmesan cheese
1 T melted margarine

Directions:

Wash zucchini and cut into 1-inch slices. Cook, covered, in a small amount of boiling salted water until tender (15-20 minutes). Drain and mash with a fork.

Cook onion in a 1 tablespoon margarine until tender. Combine zucchini, onion, cooked corn, cheese, eggs and salt. Turn into a 1-quart casserole.

Combine crumbs, parmesan, and melted margarine; sprinkle over corn mixture. Place casserole on a baking sheet and bake, uncovered, at 350º until knife, inserted off-center, comes out clean (about 40 minutes). Let stand 5 to 10 minutes before serving.
