2 T olive oil
1 large onion
1 tsp minced garlic
1 pound mild Italian sausage
1 pound ground beef
2 15 oz cans tomato sauce
2 15 oz cans diced tomatoes
1 large can tomato paste
1 T Italian seasoning
1 tsp basil
garlic salt & pepper to taste
1 box lasagna noodles - boiled in salt water and olive oil
1 large carton ricotta cheese
8 oz shredded mozzarella cheese
5 oz shredded parmesan cheese

Brown onion and garlic in olive oil. Add the meats and cook until done. Drain well. Add tomato sauce, tomatoes, and tomato paste along with seasonings. (I guess on amounts, seasoning to taste. The longer you simmer the sauce, the better.

Oil a 9 x 13 casserole dish. Spread sauce liberally on the bottom so pasta will not stick. Place a layer of noodles over sauce. Spread half the ricotta, half the mozzarella and a thin layer of parmesan. Repeat with sauce, noodles, remainder of ricotta, remainder of mozzarella and a thin layer of parmesan. Top with sauce and sprinkle with parmesan. Bake at 350º for about an hour or until beginning to bubble. Let cool a few minutes to set before serving.

My favorite Nanny Delulio story was when my unsuspecting friend, Holly, made lasagna for Nanny and me on my trip to Connecticut. Nanny told her in the middle of dinner that her lasagna would be a "bit tastier" if she'd add Italian sausage. Nanny truly thought she was just helping as any good Italian cook would, but I was so embarrassed. Holly pulled me aside as we were leaving and said, "I would have to pick lasagna to make for YOUR Italian grandmother!"
