Cake:
2 cups sugar
4 eggs
1 1/2 cup vegetable oil
3 tsp baking soda
2 tsp salt
2 T vanilla
2 cups flour
1/2 cup grated carrots

Cream Cheese Frosting:
1 stick butter - softened
8 oz pkg. cream cheese - softened
1 pound powdered sugar
1 cup chopped pecans

Directions:

Cake:
Mix all ingredients except carrots and blend well. Add grated carrots to cake batter and pour into 3 8-inch cake pans. Bake 325º for 30 - 45 minutes until done.

Frosting:
Mix well and spread onto cooled cake layers.
