6 eggs, separated
1/2 tsp Cream of Tartar
1 cup sugar
pinch of salt
1/2 tsp vanilla
1/2 tsp lemon extract
1/4 cup water
1 cup sifted flour
powdered sugar to taste

Custard Filling
2 cups milk
2 T sugar
2 T flour
2 eggs
1 tsp vanilla
1/2 cup chocolate chips
1/2 tsp vanilla
1/2 tsp almond extract

Cake:
Beat yolks, sugar, salt, vanilla and lemon extract. Add 1/4 cup water gradually alternating with 1 cup flour. Set aside.

Beat egg whites stiff with Cream of Tartar. Fold into egg yolk mixture and our into greased tube pan. Bake 1 hour at 325 degrees. Cool upside down in pan, remove carefully and cut into 3 layers.

Custard:
Cook milk with sugar and flour. Slightly beat 2 eggs in small bowl. Stir in small amount of custard and cook until smooth and thick.

In half the custard, stir in 1 tsp vanilla and 1/2 cup chocolate chips.
In the other half add 1/2 tsp vanilla and 1/2 tsp almond extract.

When both cake and fillings are cold, spread filling between layers and dust the top of cake with powdered sugar.

Nanny Delulio was known for making this three-layer sponge cake at family gatherings. All the Delulios and Gioia cousins requested it often, and it became known as Aunt Tessie's Sponge Cake.
