2/3 c. margarine
2 c. sugar
4 eggs
2 tsp. vanilla
2 c. zucchini, grated
2 1/2 c. flour
1/2 c. cocoa
3 tsp. baking powder
2 tsp. baking soda
1 tsp. salt
1/2 c. milk
optional: 1 c. chopped nuts

Directions:
Directions:
Preheat oven to 350ºF. Grease or line with wax paper 2 loaf pans.
Beat margarine and sugar. Add eggs, vanilla and zucchini, mixing well. In separate bowl combine flour, cocoa, baking powder, baking soda, salt and cinnamon. Add dry ingredients to egg-zucchini mixture alternately with milk.

Bake 60 - 70 minutes. Cool 15 minutes and then turn loaves out onto rack.
