1 cup uncooked instant rice
1/2 cup chopped onion
1/4 cup milk
4 ounces processed cheese, cubed such as Velveeta or American Cheese
2 T. butter or margarine, softened
2 (10 ounce) packages frozen chopped broccoli, thawed and drained
1 (10 3/4 ounce) can cream of mushroom soup, undiluted

Directions:

Preheat oven to 350 º F.
Combine all ingredients in a large bowl, and spoon into a 2-quart casserole.
Bake at 350 º F. for 45 minutes

I love this casserole. Grandpa is not so thrilled with it, as he does not like the cooked broccoli. So I make it for me.
