2 large eggs

1/2 tsp cinnamon

1/4 tsp ginger

1 dash salt

1 cup packed brown sugar

1 cup flour

1.Pre-heat oven to 350 °F (175 °C).
2.Put room temperature eggs in a bowl with the spices and sugar. Beat on medium speed for 3 minutes. It will be fluffy and a creamy color.
3.Sift and then fold in the flour. Sifting helps to avoid lumps. Dough should be almost able to hold a shape.
4.Place on a prepared baking sheet and bake for 15 minutes a batch.
5.Note: try changing out brown sugar to white sugar and adding extras like zest, coconut flakes, root beer, vanilla, anise or other spices. During preparation split dough in half to create 2 different flavored cookies
