1 T of olive oil
1 Large onion diced
2 cloves of garlic minced
1 carrot diced
1 celery stalk diced
1 ˝ c tomatoes chopped
2 Cups vegetable broth
1 Cup lentils rinsed
1 lemon juiced
1 teas soy sauce
1 teas dried basil
1 teas dried oregano
1 teas dried thyme
Salt and pepper to taste

Directions:
Directions:
Sauté onions, garlic, carrot and celery on medium heat till soft. Stir in the rest of the ingredients. Bring sauce to a simmer, cover and reduce on a low heat. Cook approximately 40 minutes till lentils are tender and most of the moisture is gone. Serve over rice.
