1 tbs peanut oil
1/2 c thinly sliced onion (so it will cook quickly)
1 tsp minced garlic
1 1/2 c sliced red bell pepper
1/4 c sliced almonds or cashews
1 (8.8 oz) pouch precooked brown rice (such as Uncle Ben's)
1 tsp fresh lime juice
2 tsp yellow curry paste (or ground curry)
1/4 c cilantro leaves
1/4 tsp salt

1. Heat a large wok or skillet over medium-high heat. Add oil; swirl. Add onion and garlic; stir-fry one minute.
2. Add rice; stir-fry 1 min.
3. Add bell pepper and nuts; stir-fry 2 min.
Stir in lime juice, curry, cilantro, and salt.

For a variation, use 1 1/2 c sliced snow peas and 1/4 c peanuts. Add 1 tbs rice vinegar and 1 tsp sou sauce.
