2 cups Elderberry Spice Juice. See Elderberry Syrup Recipe (For a lighter taste use 1 cup grape juice and 1 cup Elderberry Spice juice
1 box (4 envelopes) Knox unflavored gelatin = 1 oz powdered pectin
1/2 cup sugar or to taste

Reserve 1/2 cup juice from the 2 cups in a pyrex glass bowl/measurer. Put in the fridge until it is room temperature. Take out and sprinkle the gelatin over the cooled juice. Let sit for 1 minute. Bring the rest of the juice to a simmer. Pour over cooled juice and gelatin stirring briskly with a whisk. Continue to whisk for about 2 minutes until the gelatin is completely dissolves. Add sugar. Stir until dissolved. Pour into silicon or candy molds or glass pan. Put into fridge to harden. Remove from molds or cut into cubes in glass pan. Store in closed container in the fridge. Gummies should last for several weeks.
