Whole Turkey
Malabar pepper
4 cups chicken broth
1 stick butter, softened



Stuffing:
Apple, quartered
Onion, quartered
2 Celery stacks, halved or quartered
2 Carrots, halved or quartered

Directions:
Preheat oven to 400 degrees.

Make sure turkey is room temprature before you start. Clean out cavity (remove bag of giblets and neck) and rinse well.

Grind malabar pepper inside of cavity. Stuff cavity with fruits and vegetables. Rub the bird with butter. Put in rack in deep baking pan and place in oven.

In 30 minutes, reduce heat to 325 and cook for 10-15 minutes a pound/ Baste with stock every 20 minutes or so. If skin gets to brown before turkey is done, tent the top with aluminum foil.

When juice runs clear, leg is movable and temp is 160º, its done. Pull it out and let cool before carving. Carve legs and wings off first. And then carve the breast out and slice the breast or carve while the breast is still on the bone.

Have plate warm so it does not lose temperature or moisture. Pour juice over turkey or back into giblet gravy or make the gravy in the pan after removing fruit, veggies and fat. Make a paste of half cornstarch, half water and stir into boiling drippings, stirring constantly to thicken. Season to taste.
