2 cups granulated sugar
2 tbsp. unsalted butter
1 1/4 cups white corn syrup
2 cups heavy cream, divided
1/4 tsp. salt
1 tbsp. vanilla
1 tbsp. bourbon

Directions:
Directions:
Combine sugar, butter, syrup, 1 cup of cream and salt in a heavy 4-qt. saucepan over medium heat. Heat the remaining cream in a separate pan.

Bring the sugar-cream-butter mixture to a boil, stirring constantly and wiping down the sides of the pan with a wet cloth to dissolve any remaining sugar crystals.

When a rolling boil begins, slowly stir in the remaining cream, being careful not to let the boiling stop.

Cook over medium heat, stirring as necessary to prevent scorching until a thermometer reaches about 235 degrees.

Remove from heat and stir in vanilla and bourbon. Allow mixture to cool before starting to dip. Coat each marshmallow by dipping and place on waxed paper.

When cool, wrap each piece in waxed paper.
