1 cup flour
1 tsp sugar
1 tsp baking powder
1/2 tsp baking soda
1 egg
2 T vegetable oil (I prefer canola)

Directions:
Directions:
Mix all ingredients together (okay if batter is a little lumpy).
Ladle 1/4 - 1/3 cup batter onto a hot flat griddle or frying pan heated sprayed with nonstick cooking spray on medium high heat.
When bubbles start popping on the top of the pancake it is ready to flip, cook about 30 seconds to 1 minute more.
We, of course, like to add mini chocolate chips to the batter ~1/4 cups worth.
