1 package (8 oz) cream cheese
1 cup butter
2 cups flour
2 eggs
1 1/2 cups packed brown sugar
2 tsp vanilla extract
1 1/2 cups chopped pecans

Optional: powdered sugar for sprinkling

Preheat oven to 325º

Cream together butter and cream cheese and add in flour

Divide dough into 4 and divide each part into 12 balls of dough and press into bottom and up the sides of mini muffin tins like mini pie crusts

Mix together egg, brown sugar, and vanilla before folding in pecans

Fill the mini crusts with the pecan mixture and bake for 30 minutes or until crust is a golden brown

If desired, sprinkle with powdered sugar once cooled
