Ingredients:  
1 bag or can (about 32 oz.) of sauerkraut

Drain and rinse. Dump in bowl and add:

1 cup chopped onion
1 cup chopped green pepper
1 cup chopped celery
1 cup sugar (you may use Stevia or any artificial sweetener instead)
¼ cup vinegar (white or red)
¼ cup canola/vegetable oil
1 small jar chopped pimentos (don't drain the juice)

Directions:

Stir thoroughly. Cover the bowl and chill before serving. This will keep in the refrigerator for several weeks. Keep covered.
