5 eggs
1 lb. or 2 c. of ricotta cheese
2 c. flour
4 tbsp. sugar
3 tsp. baking powder

vegetable or canola oil
powdered sugar

Directions:
Directions:
1. In a large bowl; mix ingredients until smooth and creamy.

2. In a frying pan over medium high heat, heat vegetable oil until hot. Drop teaspoonfuls of batter into the hot oil and fry until golden. Remove with a slotted spoon and let dry on paper towels.

3. Sprinkle with powdered sugar if desired.
