5 eggs
pinch of salt
1 c. cold water
1 c. flour

Stuffing
1 1/2 lb. ricotta cheese
2 eggs
1 c. grated cheese
1/4 c. fresh parsley
pepper, to taste

Directions:
Directions:
1. Beat the shells ingredients until smooth.

2. Use a small frying pan to make the shells. (It is like making crepes.) Spray with cooking spray if needed. Use a shot glass, and pour one shot of the batter into the frying pan. Cook on both sides till done.

3. Mix the stuffing ingredients together until well incorporated.

4. Prepare a glass or metal baking dish by putting a thin layer of marinara sauce at the bottom.

5. Fill the shells with the filling, and roll. Place rolls in the baking dish.

6. Cover with red marinara sauce.

7. Bake at 350 degrees for 40 minutes.

This is my grandmother,, Nanni's, recipe. The recipe should make and fill about 25 shells.

The circles can be frozen by stacking therm with wax paper between layers. You can also fill the manicotti and freeze them stuffed.
