- 2 lbs hamburger
- 1 cup Italian bread crumbs
- 2 eggs (beaten)
- 2 cloves fresh garlic (finely minced)
- 1 large carrot (finely minced or whazzed)
- 1 large sweet onion (finely minced or whazzed)
- 1 large green bell pepper (finely minced or whazzed)
- 1/2 tsp dried thyme
- salt and pepper to taste
- bbq sauce to taste (favorite brand, I use sweet baby rays)
- extra virgin olive oil

If you have a food processor whazz the vegetables and garlic until they become "pasty". If you don't have a food processor that is okay, just mince all the veggies and garlic to get them into as tiny of pieces as you can possibly manage, the smaller the better. Sautee the veggies and garlic in extra virgin olive oil and season them liberally with salt and pepper. Once the veggie/garlic combo is thoroughly sautéed, set aside to cool. Next, mix the meat, beaten eggs, breadcrumbs, thyme, a pinch of salt and pepper, cooled veggie mix and enough bbq sauce to make the meat SMELL like the bbq sauce (about 1/2-3/4 cup) and mix well to combine everything. Once mixed, shape into "loaf" in a 9X13 baking pan and bake at 350F for 30 min. Next, cover the entire loaf evenly with BBQ sauce and bake for an additional 30 min.

A food processor makes this recipe a breeze to make, if you don't have one invest in one! This recipe goes great with white rice or garlic mashed potatoes and any kind of vegetable on the side. I personally like it with sautéed zucchini! YUM!
