4 lb. pork shoulder (can part chorizo)
onion chopped
sweet pepper and or poblano chopped
jalapeño chopped
2 T. salt
1t. pepper
1/4 c. cumin
2 t. oregano
1/2 c. chili powder
10 cloves garlic
15 oz diced tomatoes with green chili
2 c. beef stock
1 c. dark beer
32 oz chili beans
Hot sauce

Directions:
Directions:
Brown chorizo and pork on all sides. Drain.
Sauté onions and pepper. Add meat back to cooker and add all ingredients except beans and hot sauce. Refrigerate overnight.
Next morning, cook on high if using large pieces of pork to shred or low if smaller pieces or ground.
Stir in beans when nearly ready to serve.
Serve with: cheese (Manchego, aged cheddar, Jack) cilantro, green onion, lime wedges, pepitas, avocado, sour cream or crema, tortilla chips
