• 2-3 pounds small yellow potatoes, or a mixture of small yellow, red, and blue potatoes
• 3 tablespoons olive oil
• 3 tablespoons chicken stock
• 1 teaspoon cumin
• 1 teaspoon dried oregano
• 1 teaspoon paprika
• 1 teaspoon salt
• 1 tablespoon pepper paste (or 1-2 teaspoons chile powder)
• Creamy Aji Amarillo Sauce for serving - OPTIONAL
• Kosher salt (or regular salt) and freshly ground black pepper to taste

Directions:
1. Place potatoes in a large bowl. Preheat oven to 375 degrees.
2. In a medium bowl or large measuring jar, whisk together the olive oil, chicken stock, aji panca paste (or chile pepper), cumin, paprika, oregano, and salt. Pour mixture over the potatoes and toss potatoes until they are well coated with the mixture.
3. Spread the potatoes out in a single layer in a roasting pan. Cover pan with a piece of foil.
4. Place potatoes in the oven and bake for 30 minutes. Remove foil and use a spatula to flip the potatoes, in order to coat all sides with the marinade. Bake the potatoes for 20-30 minutes more, flipping them occasionally with the spatula, until the skins are crisp and the potatoes are very tender when pierced with a fork.
5. Remove potatoes from oven and let cool for 5-10 minutes before serving. Season with kosher salt and freshly ground black pepper to taste.
