2 tbsp. olive oil
1 medium onion, chopped
1 clove garlic, minced
2 slices prosciutto, chopped
1/4 c. white wine
3/4 c. Italian-flavored bread crumbs
Salt and pepper to taste
1 tbsp. dried parsley
2 tbsp. butter, melted
1 lb. grouper cheeks

1. In a skillet, heat oil on medium-high heat; sauté onions and garlic until limp. Add prosciutto and continue to sauté briefly.

2. Pour in wine; cook for 2 mins.; stir in bread crumbs, salt and pepper, parsley and melted butter. Remove from heat.

3. Grease individual casserole dishes. Arrange grouper in the bottom. Sprinkle with lemon juice and cover with the bread crumb mixture. Dot with butter.

4. Bake in a preheated 400º oven for 15 mins.
