3 lbs. Chicken tenderloins
2 cups of all purpose flour
2 cups corn starch
1 heaping tablespoon of baking powder
3 eggs
2 tablespoons of milk

Directions:
Directions:
Soak chicken tenderloins in salt water for 1 hr.

Mix 2 cups of all purpose flour, 2 cups corn starch, and 1 heaping tablespoon of baking powder in a large Ziploc bag. Add any seasoning you like to the mixture.

In a bowl, add 3 eggs and 2 tablespoons of milk and whisk together.

Pat the tenderloins dry and place in flour mixture.

Shake a few at a time then dip in egg mixture and place back into flour mixture again. Shake until well coated.

Place into just enough heated oil to cover chicken and cook about 8 min. or until golden brown and cooked through.
