1 lbs Thick Cut Bacon
1 lb Ground Beef
4 Shallots (Large, minced)
2 T Steak Rub (see my rub mix recipe)
2 T Balsamic Vinegar
1/3 C Shredded Mozzarella Cheese
Balsamic Vinegar
1 Package of Hawaiian Sweet Dinner rolls (sliced in half to form a bun)
Salt and Pepper to taste

1. Weave bacon on a large piece of parchment paper to form a tight "mat".

2. In a separate bowl, add ground beef, egg, steak rub and balsamic vinegar and mix well. Add salt and pepper to taste.

3. Place meat over bacon and flatten to edges, in a thin layer. Next make a thin layer of minced shallots, followed by a layer of cheese.

4. Roll mixture into a log. Using the indirect cooking method, Place on BBQ in and cook at 300 º for 2 hours. Then increase heat to 400º for 30 more minutes.

5. Remove and let set 5 minutes. Slice the log into 12 even pieces and serve in Hawaiian sweet dinner rolls.

Variation's: Used Jimmy Dean spicy sausages in lieu of ground beef and add a layer of cream cheese, jalapeño peppers and pineapple.
