Shrimp Alla Marinara Recipe

8 tbsp olive oil
8 cloves garlic. peeled and lightly crushed
2 1/2 lbs shrimp (about 30) peeled and deveined
salt and pepper to taste
marinara sauce
2 tbsp minced fresh parsley

Marinara Sauce:
1 28 oz can whole tomatoes
1/4 c olive oil
7 garlic cloves, peeled and slivered
1 tsp salt
1 tsp fresh basil or 1/4 tsp oregano
pinch of crushed dried red pepper flakes or chill powder

Marinara Sauce:
In a large bowl add tomatoes crush with your hands. Pour 1 cup water into can and slosh it around to get tomato juices. Reserve. In large skillet over medium heat, heat the oil. When it is hot, add garlic. As soon as the garlic is sizzling add the tomatoes, reserved tomato water, salt, pepper, basil or oregano and red pepper flakes/chill powder. Stir. Simmer sauce until thickened and oil on surface is a deep orange, about 15 minutes. Set aside.

Heat 4 tablespoons of olive oil in a large skillet over medium heat. Add 4 garlic cloves and cook just until golden and sizzling. Add half the shrimp placing them in one layer in the pan. If you crowd the shrimp, they will steam instead of fry. Sprinkle shrimp with salt. Cook turning once, just until lightly golden and pink around the edges, about 4 minutes total. With a slotted spoon, transfer shrimp to a plate. Discard garlic cloves. Repeat with remaining oil, garlic and shrimp.

When all the shrimp are cooked, pour the sauce into the empty skillet and bring to a lively simmer, stirring to scrape the bottom of the pan. Taste for salt. Stir in the shrimp and parsley and cook just until the shrimp are heated through. Serve immediately over your favourite pasta.
