1 cup white flour
⅔ cup whole wheat flour
¼ cup sugar
¼ cup Splenda©
1 tsp. baking soda
1 tsp. baking powder
½ tsp. salt
½ tsp. nutmeg
¼ cup butter, melted
1 egg, lightly beaten
1 cup buttermilk
1 tsp. vanilla
1 cup frozen berries (strawberries, raspberries, blueberries)

Preheat oven to 375ºF. Grease muffin tin or use parchment baking cup liners.

Sift together flour, sugars, baking soda, powder and nutmeg. In another bowl, whisk together melted butter, egg, buttermilk and vanilla.

Pour the buttermilk mixture into the dry ingredients and stir just until mixed. (the batter will not be smooth). Gently stir in frozen fruit. Scoop batter into greased muffin tins, almost full. Bake for 16-18 minutes. Do not over bake.
