Cranberry Pecan Oatmeal Squares Recipe

Ingredients: Filling: 1 - 2 c of home-made cranberry sauce OR 1 c sugar 1 c water 12 oz pkg fresh cranberries
Crust and topping: 1 1/2 c flour 1/2 tsp baking soda 1/2 tsp salt 3/4 cup butter 1 c white sugar 1 1/2 c raw quick-cooking oats 1 to 1 1/2 c roughly chopped pecans

Directions:Bring sugar and water to a boil in a large saucepan. Add cranberries. Reduce heat and continue to boil gently until all the cranberries pop (about 5 to 10 minutes) stirring frequently. Set aside and cool completely. Best to make the day before.
Beat together butter and sugar until fluffy. Add remaining ingredients. Knead until well mixed. Press 2/3 of the crust mixture evenly into the bottom of the lightly greased 9 x 12 baking pan. Spread the cranberry sauce evenly on top. Sprinkle the remaining flour mixture on top of that and pat gently.
Bake in a pre-heated 375º oven for 30 minutes or until golden. For a carmelized sauce leave in for an extra 5 to 10 minutes. Cool slightly and cut into bars while still warm.
Note: You can use almonds instead of pecans or a bit of orange peel in the cranberries. |

Notes: These are great squares to make after those turkey dinners when you have left over homemade cranberry sauce. One cup of cranberry sauce creates a drier square and two cups will make a gooier square. I usually go with something in between.
