Best Pot Roast Ever Recipe

3 lb. chuck roast
8 medium potatoes
16 oz. baby carrots
1 large yellow onion
1 can mushroom soup
1 pkg. Lipton dry onion soup
1 cup milk
3 Tbsp. corn starch
salt
pepper

Directions:
Directions:
1. Preheat oven to 350º.
2. Peel and cut potatoes and onion into large chunks - rinse thoroughly.
3. Mix mushroom soup and milk with whisk until smooth.
4. Spray roasting with Pam non-stick cooking spray.
5. Pour small amount of soup mixture into bottom of roasting pan.
6. Lightly salt both sides of chuck roast and place in roasting pan.
7. Place onion pieces next to roast.
8. Place potato pieces next to onions to hold them in place.
9. Place carrots on top of potatoes.
10. Sprinkle Lipton soup on top.
11. Pour remaining soup mixture on top of everything.
12. Bake at 350º for 3-4 hours - test roast to be sure it is done in the middle and carrots are tender.
13. Remove roast and vegetables and place in serving dish.
14. Pour broth in large pan and heat.
15. Mix corn starch with cold water and slowly pour into broth to form gravy - stirring constantly until broth begins to thicken.

This recipe easily doubles. Use large roasting pan and place roasts side by side then place vegetables as described above.

This recipe makes a great Beef Stew from the leftovers:

1. Follow directions for "Best Pot Roast Ever" above.
2. After baking, allow pot roast to cool.
3. Cut meat, potatoes, carrots and onions into bite size pieces.
4. Place in large pot along with the broth from pot roast.
5. Add 2 8 oz. cans of tomato sauce (may add more according to taste).
6. Add corn, green beans or other vegetable if desired.
7. Heat all ingredients on medium heat for 30 minutes.
8. Taste to see if extra salt may be needed and add according to your taste.
9. Enjoy with cornbread or rolls!
