Ingredients:  
Mix and match any of the following vegetables for kabobs:
cherry tomatoes
mushrooms
brussels sprouts
red or green pepper cubes
asparagus cut into 2" lengths
1 to 2" chunks of corn on the cob
chunks of sweet potatoes
chunks of zucchini
red onion, sliced

Marinade:
3/4 c olive oil
1/4 c lemon juice
2 tbsp Italian seasoning
2 tbsp red wine vinegar
1 tbsp dijon mustard
1 tbsp garlic powder

Directions:
Directions:
Combine the ingredients for the marinade. Pour marinade over the vegetables in a sealable plastic bag or container. Toss. Cover and refrigerate for a couple of hours.

Drain the vegetables, thread vegetables alternately onto skewers. Cook on barbeque over medium-hot setting, turning frequently, for about 15 minutes until vegetables are tender.
