1 cup milk
1/2 ounce dry active yeast
2 1/2 cups flour
2 tbsp sugar
1/2 tsp salt
1/2 tsp nutmeg
2 egg yolks
2 tbsp soft butter
1 tsp vanilla extract
Flour for kneading dough on surface
Vegetable oil (for frying)
White sugar (for rolling of the donuts)

Cream Cheese Filling:
1 package cream cheese, softened
1/2 cup sugar
1/2 tsp vanilla extract

Directions:
Directions:
In a pot, warm milk to lukewarm temperature. Stir in yeast until dissolved. In a separate bowl add and mix the flour, sugar, salt, nutmeg. Add the milk-yeast mix into the dry mix. Give it a mix. Add eggs, butter, vanilla extract and mix well. On a surface area, sprinkle some flour onto surface, scoop out the wet dough onto that surface and knead dough for 5 minutes. Place dough in a bowl, cover and put in warm place. Let it rise until double in size. While you wait, prepare the cream cheese filling by beating the cream cheese in a mixer. As it beats, gradually add sugar and vanilla extract. Remove and set aside once creamy. Once dough has risen, place on floured surface, flatten and roll it out to about an inch thick. Cut out circles using a 2-3 inch round cutter. In a large pot, heat enough oil to about 350 degrees F to fry donuts comfortably. Fry one side of each donut at a time until golden brown (1-2 minutes). Flip over and fry other side. Remove donut from pot, place on a paper towels to allow grease to drain. In a wide bowl, pour enough sugar to gently roll the donuts until evenly covered. Transfer to wire rack to cool further. Scoop cream cheese filling mix into a piping bag. Insert piping tip into side of donut, and fill cream cheese as desired. Serve immediately.
