1¼ cups sugar
½ cup softened butter or margarine
2 eggs
1½ cups mashed very ripe bananas (about 3 medium)
½ cup buttermilk
1 teaspoon vanilla
2½ cups flour
1 teaspoon baking soda
1 teaspoon salt
1 cup chopped nuts (optional)

Heat oven to 350°. Grease loaf pan.

In a large bowl stir sugar and butter until well mixed. Stir in eggs until well mixed. Stir in bananas, buttermilk and vanilla and beat with spoon until smooth. Stir in flour, baking soda and salt just until moistened. Stir in nuts.

Put batter into pan. Bake about an hour or an hour and 15 minutes – until toothpick inserted in centre comes out clean. Cool 10 minutes on wire rack. Loosen sides and then tip out onto rack.
