2 cups flour
2 cups white sugar
2 cups shredded carrots
1½ cups vegetable oil
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon cinnamon
4 eggs (preferably Conor’s free range)

Cream Cheese Icing:
½ cup butter or margarine
8 ounces cream cheese, softened
1 pound icing sugar
1 teaspoon vanilla
1 cup chopped walnuts (optional)

Directions:
Directions:
Cream oil and sugar. Add eggs one at a time. Stir in dry ingredients; then add carrots. Bake in a greased and floured cake pan at 350° for about 1 hour. When cool top with cream cheese icing.

Beat together icing ingredients and frost cake.
