1¼ cups flour
2 tablespoons sugar
2 teaspoons baking powder
¼ teaspoon baking soda
¾ teaspoon salt
3 tablespoons vegetable oil
1⅓ cups milk (or 1 cup for thicker pancakes)
1 egg slightly beaten

Directions:
Directions:
In large bowl with fork mix first 5 ingredients. Add the oil, milk, egg and stir until flour is moistened. Preheat griddle and brush lightly with oil. Cook until bubbly and bubbles burst; edges will look dry. Flip and cook on other side.
