5 to 6 potatoes cooked (2 cups)
1 teaspoon salt
1 egg
1½ cup flour
½ pint sweet cream (½ and ½)
2 tablespoons butter
¼ cup bread crumbs
1 tablespoon sugar

Directions:
Directions:
Boil medium sized potatoes and either mash or put through potato ricer. You may use leftover mashed potatoes. Put in a bowl and add egg, flour and salt. If the mixture is too soft, add more flour. Roll out to about ½ inch thickness on a floured board. Cut dough into 3 inch squares. Pit fresh plums (Italian prune) and put into centre of each square. Shape into balls.

Place one at a time into boiling salted water and boil for about 30 minutes until they rise to the top. Remove with a slotted spoon or strainer.

In the meantime add a small amount cooking oil in a frying pan. Add the dumplings and slowly reheat and slightly brown. Add cream. May top with bread crumbs toasted in butter with sugar added; or ground poppy seeds; or a mixture of sugar and cinnamon.

Poppy seeds must be ground for use. They will do this at Courtland Bakery if you purchase there. A favourite of Kaitlyn's.
