1½ inch thick round steak
Salt and pepper
Flour for dredging
2 tablespoons oil
1 onion sliced
Boiling water to cover

Directions:
Sprinkle a 1½ inch thick round steak with salt and pepper. Dredge with flour on both sides. Pound well with a wooden masher. Keep dredging and pounding until the steak won’t absorb any more flour.

Add 2 tablespoons oil into a large frying pan. When hot, add the steak and brown on both sides. Cover the steak with slices of onion and pour enough boiling water to cover the steak – careful it will splatter.

Cover tightly and simmer for 1½ hours. You may have to occasionally add more boiling water. Serve with boiled or riced potatoes.

The gravy is wonderful and you won’t need a knife to cut the steak. To make thicker gravy you may add 2 tablespoons of flour mixed into ¼ cup of water and add to the liquid in the pan. Stir until thickened.
