2 to 2½ pounds breast of veal, boned and trimmed
3 tablespoons vegetable oil

Stuffing:
3 dry white rolls
1 tablespoon butter
½ cup finely chopped onions
⅓ pound each ground beef and ground pork
1 tablespoon finely chopped parsley
Salt and pepper

Tear the rolls into small pieces and soak in milk for 5 minutes. Gently squeeze and set aside in a large mixing bowl. Fry the onions in butter until golden. Add into the bread mixture along with the remaining stuffing ingredients. Mix until well blended. Season with salt and pepper.

Preheat oven to 350°. Place the boned veal flat on a board. Sprinkle with salt and pepper. Spread the stuffing evenly over the top.

Beginning with wide side, roll veal jelly roll fashion. Tie at both ends and centre with kitchen cord. Place into a roasting pan and rub with vegetable oil. Add small amount water to bottom of roasting pan. Cook for 1½ to 2 hours, basting frequently. Uncover last ½ hour.
