8 tablespoons sugar
4 tablespoons flour
8 tablespoons finely ground walnuts

To make 2 10 inch cakes use 12 eggs, 12 tablespoons sugar, 6 tablespoons flour and 12 tablespoons ground walnuts.

Beat egg whites until stiff in a large bowl. Beat egg yolks with sugar in a small bowl until lemon coloured. Fold egg whites and yolks together, gradually adding flour and walnuts.

Pour into 2 greased 8” cake pans. Bake at 350° for about 25 to 30 minutes. To cool, turn upside down on cooling rack. For more layers, slice cake into two. This will make four layers in total.

Spread peach or apricot jam on one layer. Add chocolate buttercream icing to another layer. Frost cake with chocolate buttercream icing.

To cut cake layers, cut outside edge with a knife and then use dental floss by weaving back and forth to cut through. Elsie's favourite birthday cake.
