1.5 kgs gherkins
6 medium onions
¼ cup plain salt
Cold water

Directions:
Directions:
Cut up gherkins and onions. Add salt. Cover with water. Leave overnight. Next day, drain off water.

Mix in a pot the following:
4 cups white vinegar
1.5 teaspoons turmeric
2 tablespoons mustard seeds
4 cups sugar
1 teaspoon celery seeds
4 teaspoons curry powder

Add gherkins and onions. Bring to a boil, and then add one small tin of crushed pineapple (440 mls), 1 red and one green capsicum (sliced and chopped). Boil a few minutes, thicken with cornflour and white vinegar. Bottle when cool.

This is pickle is divine added to sour cream (1 tablespoon to 1 tablespoon ratio).
