Peppers - yellow, red or orange (Hungarian sweet) - about ½ bushel
3 cups white vinegar
10 cups water
2 cups white sugar or less to taste
2 tablespoons salt
1 tablespoon mixed pickling spices

Directions:
Directions:
Pack peppers into jars. Bring the remaining ingredients to a boil. Pour enough into each jar to mostly cover the peppers but leaving room near the top of the jar. Place closed jars into a pan with about 1 inch of water. Place into 250° degree oven. Turn oven off and leave to cool in oven overnight. Allow flavours to develop. Will be ready to eat in about 3 weeks.
