7 or 8 medium size potatoes
2 stalks celery
2 lengths carrots
1 medium onion
dill - a handful of fresh chopped or 2 Tbsp dried
1 500ml carton whipping cream
1 can chicken or pork broth
1 cup peas/broad beans
4 cups or more shredded beets
¼ cup vinegar
Salt and pepper to taste

Directions:
Directions:
Cut up enough potatoes to fill a Dutch oven half-way. Add chopped celery, carrots, onions, peas or beans, dill, broth, beets and whipping cream. Fill pot with water to cover vegetables. Heat until potatoes are soft. Sprinkle with 1 Tbsp coarse pepper and 2 Tbsp salt (or to taste), ¼ cup vinegar (or a little more) and serve with buns or bread and butter.
