½ cup light mayonnaise
½ cup plain Greek yogurt
¼ cup sour cream
½ Tbsp lime zest and 4 Tbsp juice of the lime
3 Tbsp chopped fresh cilantro
salt and pepper
1½ cups panko bread crumbs
1 pound skinless salmon fillets, finely chopped
4 oz can whole green chilies, drained and chopped finely
1 small onion, thinly sliced
1/3 cup vegetable oil

Directions:

Whisk mayonnaise, yogurt, sour cream, lime zest, lime juice and cilantro in bowl. Season with salt and pepper.
Put ¾ cup bread crumbs in a separate shallow dish and reserve for dredging. Combine salmon, chilies, onion, 3 Tbsp mayonnaise mixture, remaining panko, ½ tsp of salt, ¼ tsp pepper in a bowl. Form salmon mixture into four 3½ inch patties. Dredge patties in bread crumbs, pressing to adhere to the salmon patty. Heat oil in a large non-stick skillet to medium-high . Add patties and cook until golden brown and cooked thoroughly (about 4 minutes per side). Set on paper towel to absorb extra oil. Serve with remaining mayonnaise mixture.
