2 cups cherry or grape tomatoes
2 garlic cloves, minced
½ cup mushrooms, sliced
3 Tbsp olive oil
Sea salt
Pepper to taste
3 Tbsp balsamic vinegar
16 oz linguine

Directions:
Directions:
Place tomatoes, mushrooms, and garlic in roasting pan or on cookie sheet. Drizzle with olive oil, sprinkle with salt and pepper, then place on middle rack of oven for 25 min. Once roasted, squash tomatoes only with a fork to get the juices going. Drizzle with balsamic vinegar. Keep warm and set aside. Cook pasta according to package instructions, until al dente. Drain pasta, add roasted tomato and vegetable sauce. Fold gently. Garnish with basil. Serves 4.
