1 large pork roast, cubed (½ inch or smaller)
3 heads garlic (not cloves – heads!), peeled and chopped
2 Tbsp thyme
6 whole cloves
2 tsp salt
½ cup water and enough vinegar to cover meat

Directions:
Directions:
Mix all ingredients in crockpot. Cover with lid and let the mixture age in the fridge. Stir once each day. You may need to add vinegar if the meat absorbs too much liquid. After four day, drain as much liquid as possible from the meat.
Cover the bottom of a large frying pan with olive oil. Heat to medium.
Fry meat on medium for about 15 minutes. Continue cooking until the liquid has evaporated and the pork is done.

We like it cooked a bit crunchy. It’s become a tradition in our family and originates from British Guyana. When we have the time to prepare it in advance, it is a much-anticipated side dish to accompany the turkey at Christmas, New Years, Easter and Thanksgiving. It is great for breakfast the next day with eggs! We often double the recipe with two roasts and freeze half the marinade batch for another time.
